Cooking these shrimp and chive dumplings in an eggy omelette base makes this a complete meal
Ingredients
- 16-20 ready-made dumpling skins
- 250g peeled shrimp
- 1/4 cup chopped Chinese chives
- 2 teaspoons soy sauce
- 1/4 teaspoon salt
- 1/4 teaspoon sugar
- 2 eggs
- Oil, for frying
Instructions
- Wash the Chinese chives thoroughly, then cut into short sections around 1cm. Chop the prawns up until they're slightly sticky and paste-like, but leave some bigger chunks for texture.
- In a bowl, combine the prawn mixture, chives, soy sauce, salt and sugar. Stir until combined, then use your hand to mix vigorously in one direction until it feels slightly more resistant. You can also throw the filling back into the bowl a few times to tighten up the proteins for more bounce.
- Place a small dollop of filling in the centre of each dumpling skin, brush half the edge with water and fold up in your preferred way, sealing tightly by pressing hard.
- In a nonstick pan with a lid, pour a tablespoon of oil in. Arrange the dumplings and pour in some freshly-boiled water, then cover the pan. Cook on a high heat until the water has evaporated and the dumpling skin is cooked through.
- In the meantime, beat the eggs with a pinch of salt. When the dumplings are ready, remove the lid and pour the beaten egg in between the dumplings to form an omelette.
- Once the egg is cooked, carefully slide out onto a plate. Serve!
